Course Description:

Take a deep dive into a vat of chocolate science and lore featuring the latest research. From its ancient roots in the land of the Olmecs, this 'food of the gods' has become a worldwide cultural and culinary force. How did the cacao bean come to both fortify warriors and soothe the broken-hearted? What is the process that turns beans into bars? And what's the best way to savor, appreciate and compare chocolates? These questions—and many more—will be answered in this delicious two-part offering, which includes a chocolate tasting as part of our final session.
